Money Talks: Frugal Family Feast Enchiladas
A fifteen dollar meal that's going to feed a family of four a feast. Today we're making chicken enchiladas.
Here's what you're going to need:
Garlic, tomatoes, pepper, salt, chipotle pepper, red wine vinegar, cilantro, red onion, cheddar cheese, tomato sauce and shredded chicken and tortilla shells.
We're going to put the sauce ingredients in a bowl. Tomatoes, onions and all the other good stuff. We're going to toss them together, put them on a tray and bake them at 450 degrees for about 12 minutes. We're going to roast those. Roast that and then we're gong to throw it in a blender. A nice, creamy sauce.
So now we're going to assemble the enchiladas.
Grab a little bit of chicken. Put that in the middle of the tortilla. Put some of the cheddar cheese and some of the cilantro.
Then we're going to roll this guy up and put it on a baking tray, top them with our sauce and pop them in the oven for a couple of minutes so they get nice and toasty.
