Money Talks: Frugal Family Feast Ratatouille
We all want to cut some of the fat out of your family's budget?
One way to do it is to prepare fabulous meal, a feast for four for less than 15 dollars.
We're going to make ratatouille today and we're going to serve it with chicken.
What goes into ratatouille?
Eggplant, onion, zucchini, yellow squash, we've got bell peppers, basil, garlic, thyme and parsley.
That's the ingredients, how are you going to throw it together?
First we've got some eggplant that's cut up, a little salt and pepper.
You always want to make sure it's seasoned.
And now we're just going to toss that, put it on a sheet pan.
Into the oven it goes and I've already got a seared piece of chicken right there.
Just the eggplant and the chicken and into the oven it goes, about 20 minutes.
Now we're going to put a little bit of olive oil in the pan and then this stuff.
Lets do the vegetables. Let's put some bell peppers in there. That's beautiful. Tomatoes, zucchini.
You want to cook it separately. That way you can make sure that it doesn't get mushy.
And we have some zucchini because it's a big part of this ratatouille.
So we cook it all together, and when the eggplant comes out we're going to put it together and it's going to be delicious, beautiful. Serve it all together.
